With the warmer weather it can be hard to find inspiration for dinner.  This Summer Pasta dish is light but full of flavour and super easy to make.   It can star as the main dish or work great as a side dish for your next bbq!

 

Ingredients:

  • 18 Basil, large leaves
  • 4 pints Cherry tomatoes
  • 6 cloves Garlic
  • 1 x package Angel hair pasta (you can substitute for another kind of pasta)
  • 1/2 tsp Black pepper, freshly ground
  • 1 tsp salt
  • 1/2 tsp Red pepper flake
  • 1 tsp of extra virgin olive oil
  • 1 1/2 cups Parmesan cheese

 

Directions:

In a fry pan add garlic (crushed or finely chopped) olive oil, red pepper flakes , salt and cherry tomatoes.   On medium heat cook until the tomatoes have softened, reduce to low simmer.

Cook pasta as per package instructions, remember your water should “taste” salty when cooking pasta, this will bring out the flavour of the pasta.   For BEST pasta results, cook pasta until al dente – this will avoid “mushy” over cooked pasta.

In a serving bowl add in al dente pasta (drained) add in your sauce mixture from the fry pan, mix.  Take your fresh basil (chopped) and pepper and add into your pasta, mix.   Add in your parmesan cheese and serve!
