Nothing beats coming into the site or around the fire after a long day of hiking around the lake and forest and sitting down to an awesome meal over the fire. We’ve put together a few of our favourite fireside meals, and they’re delicious and super easy to cook!

Poached trout filet
Simple and delicious, grilling and poaching trout is so easy. Use some aluminum foil to make a tray for the filet, drizzle with lemon juice, a quarter cup of white wine, some dill and butter. Close up the filet with the rest of the foil and place on the grill on medium for 12-14 minutes and you’re golden!

Pesto and Lemon Veggie Skewers
Grab some skewers from the grocery store, and while you’re there grab zucchini, red and yellow peppers and some cherry tomatoes. Skewer them up, drizzle in olive oil, lemon juice and pesto and grill for 20 minutes.

Corn on the Cob
All you need to do is shuck the corn completely. When that’s done, smother in butter, salt, pepper and smoked paprika or cumin. Slap on the grill for 10 minutes, and finish with some bacon bits or some grated mozzarella or parmesan.
Chicken Thighs
To start, out the grill on medium-to-high heat. Mix up a bowl of ketchup, vinegar, brown sugar, molasses, Worcestershire sauce, mustard, garlic powder, onion powder, pepper and water and cover the thighs in the bowl of sauce. Lay down a layer of foil on the grill, dull side up and put the thighs on there for 10 minutes for each side.
Half the fun of camping and hiking is the reward at the end of the day. A good meal is comforting to sit down to, and you know it will help you sleep off that long day of exercise and calorie burning you just did. So pull up a chair, grab a plate and toast your feet around the fire.
